Kulfi faluda

Kulfi faluda from Nathu's Sweets in Delhi, India.

What: This popular dessert pairs kulfi, India’s dense and creamy milk-based (eggless) ice cream, with faluda, or clear vermicelli noodles, usually dipped in rose water. Like its distant cousin rabri faluda, it seems an odd combo to foreign eyes, but it somehow works.

Where: Our KF came at the end of a great chaat-filled meal at Nathu’s Sweets (multiple branches including 23, 24, 25, Bengali Market, map), a family-friendly diner-like spot not far from Connaught Place.

When: Daily, 8:30am-11pm

Order: Following some self-assembled, hygienic gol gappas, and maybe some papri chaat or aloo ki tikki, finish things off with a chilled kulfi faluda (53 rupees): here, a smooth, yellow, pistachio-dotted kulfi topped with clear, floral-scented noodles. The restaurant states they don’t add any sugar, so the dish has the perfect amount of subtle sweetness. Delicious and refreshing.

Alternatively: In Karol Bagh, Roshan Di Kulfi (2872-4230; 2816, Ajmal Khan Rd., map) is a local favorite for kulfi faluda. You can also try one of Giani’s many branches (not the Old Delhi original), like that in North Delhi’s Kamla Nagar neighborhood (28-Ua, Main Bungalow Rd., Jawahar Nagar, map).
