It is hard to spend any period of time in Croatia without noticing carts and fast food restaurants grilling what look to be small uncased sausages. Typically about three inches in size, they look like sausages, but their actual name is cevapi or cevapcici. Common in Croatia and Bosnia, they are made of ground lamb, beef, or pork with numerous spices and have more the consistency and taste of a meatball than of a typical sausage. They are grilled, served on a roll (not a hot dog bun), and are topped with ajvar, a thick red pepper and aubergine (eggplant) relish flavored with garlic and pepper. Sometimes it is sweet and sometimes it is spicy, and this relish is served with many dishes, making it the most common condiment in Croatia.
