In the German-speaking Villnoss Valley (Tyrol, Italian Alps), bacon and prosciutto collide in the cured and smoked delight called Speck. Smoky, creamy, salty, savory, it goes with everything. We attended Speckfest and ate Speck with every meal. Tops was this elegant pairing with fried eggs at an outdoor cafe at the foot of the Dolomites.
