Palm Sap, La Gomera, Canary Islands This product is unique to La Gomera and acts as a sugar substitute. The Palm Sap is more like Maple Syrup than honey - although they like to compare it to honey. As the bark of the palm tree is so thick, harvesting the sap requires someone (with expertise) to climb the tree and cut through a large part of the bark until they make a cut into the tree. They insert a siphon and collect the sap, which is boiled down to a syrup or honey. After collecting sap for a short time, they cover the cut with palm leaves and let the tree heal for 6 or 7 years before collecting sap again. They make all sorts of products from the Palm Sap.
