Taco de suadero

A taco de suadero from Tacos Alvaro O. in Mexico City.

What: Suadero is tender slow-cooked beef brisket, somewhat similar to pork carnitas in texture but softer and meltier. It’s very popular in the capital—not to mention really delicious—so we’re including it here.

Where: Our pic is from Tacos Álvaro O. (Álvaro Obregón 90, betw. Orizaba & Cordoba, map), a bright, clean, orange-hued taquería in Roma Norte.

When: Mon-Thurs, 1pm-11pm; Fri-Sat, 1pm-11:30pm

Order: Un taco de suadero (7p). Here, it’s piled high with meat, topped with the usual diced onions and cilantro. Tables provide limes and three different salsas.

Alternatively: You’ll find suadero tacos at taquerias all over town.
