What: Sopes are savory, corn-y, delicious antojitas—snacks—made of thick, fried (but not crunchy) masa shaped into what resembles a thick tortilla, but with prominent pinched edges. It acts as a little dish of sorts, so that various ingredients can be piled into it. Common toppings include refried beans, lettuce, tomato, cheese, cream, salsa, and meats or seafood. Like the tostada, these can be elegant appetizers or humble street treats.
Where: Our photo is of sope de pescado adobado at the popular Restaurante El Contramar (Durango 200, Roma Norte, map) in Mexico City, where sopes are given the royal treatment: meaty marinated kingfish, shredded lettuce, black beans, crumbly cotija cheese, and cream.
