Causas Rellenas, or stuffed potatoes, have great historical significance for Peruvians. Invented during the war against Chile when supplies were low, the Causa was created to feed troops with whatever could be stuffed into a potato. Local folklore says they were delivered to soldiers with a few short words- "This is for the cause."
