Lomo Saltado is probably the most popular of all the Chifa (Peruvian Chinese fusion) dishes in Peru. With its potatoes and rice representing Peruvian and Chinese cuisine respectively and its hearty strips of sirloin, it's a far cry from ceviche! While available all over the city, it's best eaten in a busy, local lunch spot like Carmela's.
