Chunks of incredibly tender beef (falls apart at first encounter with a chopstick) and chewy noodles swimming in a rich, meaty, deeply savoury broth. A bit of spice but not too much - the overwhelming flavour here is beefy goodness. This is one of Taiwan's most cherished dishes and the capital holds a beef noodle soup cooking competition every year
