Refajo

What: This cocktail concoction of gaseosa (soda) and cerveza is popular in other parts of Colombia, but in Santander it’s most often prepared with a certain locally produced red soft drink called Kola Hipinto.

Where: When we visited Barichara’s Restaurante La Brasa Misifu (Carrera 6 No. 6-31 between Calles 6 & 7), every table in the breezy dining room had a pitcher of refajo at lunch. We’re not big soda drinkers—and have to admit that the combo tasted a bit medicinal to us—but we made like the locals and tried a pitcher. Club Colombia was the beer on offer.

Order: Besides refajo (3,000 COP), this restaurant offers regional specialties like cabrito and carne oreada.
